Hey Presto Lamb Shank Pie
Hey Presto Spring Lamb Shanks Pie is a recipe adapted from the "Boots Off Apron On" recipe book from the Outback Kitchens of Broken Hill School of the Air. Adapted from the Lamb Shank Pie recipe by Shirralee Paler at Hazel-Dell Station.
I spent time teaching in outback South Australia, so this recipe book and it's truly beautiful photography capturing the joys and reality of outback life is a recipe book that I treasure and return to often.
I made double recipe. And when we were enjoying our Lamb Shanks Pie, I mentioned that I have more pie mixture in the fridge for another pie. Master Farmers commented that it will be great for a night when I am working. As we could whip out the pie mix, at a pastry topping and dinner is in the oven and not far away "Hey Presto". So now forever this Lamb Shank Pie will be called "Hey Presto Lamb Shanks Pie". And I am already feeling the peace of knowing that one week night meal, after a day working my day job, is not that far away.

I have a childhood memory of my paternal Grandmother’s homemade Cornish Pasties. From her families Cornish heritage.
I still regret not asking for her recipe when I had the chance.
With it being winter root veg season, I have been having a hankering for Cornish Pasties. However on the time schedule of a evening dinner, routine I chose to make Cornish Pasty Lamb Sausage Rolls.

Lately I have been loving making meatballs with Grass Fed Beef Mince from our farm.
As well as pulling out some Grass Fed Spring Lamb Mince from last year from the bottom on the freezer. It was a lovely surprise to find that I still had some Spring Lamb Mince left. As I thought it was all gone and I would have to wait until Spring 2026 for more.

It’s the middle of winter and I wanted to give you an update on what’s happening on our Adelaide Hills family farm.
It’s the July school holidays and our kids have been taking every chance to soak up being out working on our farm with their Dad.
Being outside. Working hard on real jobs that they can see progress on. Cutting fire wood, fencing and sheep work.
These are all hands on, active and physical work that our kids thrive in.
And feel great pride in their contribution to.

My mouth was watering when I heard one of our customers talking of cooking our tomahawk steaks over their open fire at home. The charcoal flavour of cooking over a wood fire sounded AMAZING!
Customer Luke spoke of his method of marinating his tomahawk in olive oil plus all sorts of deliciousness. To make a special meal at home. This sounds OH SO GOOD!
Our return customer Ann spoke with me, about how she researched and learned the reverse sear method of cooking the tomahawk, by googling online.
Ann also sought out a meat thermometer to make cooking the perfect tomahawk oh so easy.

I am sitting here at my kitchen table, sipping my second coffee.
While I'm watching out the window, as our fluffy butt golden Buff Orpington chooks are picking the grass.
And a little female fairy wren has arrived on our deck to pick some bugs, while the daddy fairy wren sits nearby on the fence. I love listening to their beautiful musical call.
And I am wondering, how many bugs does a fairy wren need to eat each day to sustain itself!

I love getting inspired by all the recipes you tell me that you will be cooking with Grass Fed Beef from our farm.
I have a list of new recipes to try and old favourites to return too.
I think with the change of seasons, sometimes I forget about winter warmers that our family really loves.
Today I have pulled out a half Grass Fed Beef Brisket to defrost. For the Skinnymixers Slow Cooked Chinese Five Spice Beef Cheeks recipe. Recommended to me at the Adelaide Showground Farmers Market on Sunday.
Beef Cheeks is a slow cooking cut. I am swapping it out for another slow cooking cut of Brisket from our farm. The fat in the brisket will cook down beautifully, keeping the brisket meat moist and fall apart delicious.
We are heading out around lunchtime. So I will be cooking the Slow Cooked Chinese Five Spice Brisket in my pressure cooker, late this afternoon.
I love my pressure cooker. Slow Cooked deliciousness. But fast!

If there is one thing I know for sure, kids eat more during the school holidays. And definitely during the cold depths of winter.
Whether it is getting outside with adventures to explore the forest, bike rides on the Amy Gillett Bike Track, camping trips gathered around a cosy campfire, meet ups with school mates at the local playground and bike track, where a packed picnic lunch is essential.
Or cosy days winter school holidays indoors filled with puzzles, drawing and painting, making lego, writing letters to loved ones or reading a really great book.

There was nothing better than coming come this week through the pouring rain and hail to the smell of Osso Buco cooking up in our Slow Cooker. With Jamie Oliver’s delicious Shin Stew. I could smell the rosemary as soon as I opened the door. I couldn’t help sneaking a taste before the mash spuds were ready to serve for our family!

I was asked “What is that?” by a Mum at school drop off. When I mentioned that our farm is at Rockleigh. We had started a little business selling our beef by quarters or halves, farm direct over 2 and a half years ago.
Good question. What is that! You are not the first to ask. And I am confident not the first to think it, but not ask. So here is our run down on What is a Quarter of Beef? Straight from me, Farmers wife, Mum of two kids. You can call me Misses Farmer.
I am relatively new to the world of the processing and details of farm direct meat.
I have been on a pretty steep learning curve over the past few years.
I grew up on a farm. We had sheep. My Dad butchered our own lamb on our farm and I recall this. However, I also recall that generally the chops were on the tough side (no offence Dad!). Dad was doing what he had to do in the 1980’s to feed his family.
When I married Mister Farmer around 15 years ago, I was introduced to the world of farm direct beef for the first time. Generally, it arrived prepared and packaged. On the occasion that I did see the cut sheet, I really was pretty overwhelmed by a lot of the choices. There is a lot of decisions to make when choosing how to break down a whole animal.

Grass Fed Beef Bolar Roast on the smoker.
I received a smoker as a gift quite some time ago.
It has sat there looking at me like “go on, give it a go”.
So this last Sunday was the day.
I don’t pretend to be anything like an expert here. I am learning the smoker.

The school holidays are here. I had the weekend with my family. So I created an exciting outing. That would also fill our fridge and freezer for the coming week and month. Helping me to feed the tummy’s of our hungry kids. And in current times, I think connecting with local food is more important than ever.
The plan started with the goal of hitting four South Australian Farmers Markets in a Saturday morning. It was a ambitious goal that is for sure.
I believe that there is something special about every Farmers Market. They all have their own uniquely wonderful features.
