Hey Presto Spring Lamb Shanks Pie is a recipe adapted from the "Boots Off Apron On" recipe book from the Outback Kitchens of Broken Hill School of the Air. Adapted from the Lamb Shank Pie recipe by Shirralee Paler at Hazel-Dell Station.

I spent time teaching in outback South Australia, so this recipe book and it's truly beautiful photography capturing the joys and reality of outback life is a recipe book that I treasure and return to often.

I made double recipe. And when we were enjoying our Lamb Shanks Pie, I mentioned that I have more pie mixture in the fridge for another pie. Master Farmers commented that it will be great for a night when I am working. As we could whip out the pie mix, at a pastry topping and dinner is in the oven and not far away "Hey Presto". So now forever this Lamb Shank Pie will be called "Hey Presto Lamb Shanks Pie". And I am already feeling the peace of knowing that one week night meal, after a day working my day job, is not that far away.

Hey Presto Lamb Shank Pie

Hey Presto Lamb Shanks Pie was so enjoyed by Master Farmer that he ate his first slice of pie before the family had all sat down to say "grace". And then he lined up for another serve straight after. Hey Presto Lamb Shanks Pie is a lovely hearty nourishing pie served just on it's own with the joy of the flaky golden puff pastry crust. Or with a lovely fresh garden salad served on the side. All round, it is a family dinner winner.

Ingredients

  • 3 Peppermint Ridge Farm Co Spring Lamb Shanks
  • 3 Springs Rosemary
  • 1/2 cup water
  • Salt and Pepper
  • Olive Oil
  • 1 tablespoon tomato paste
  • 1 tin diced tomatoes
  • 3 cloves garlic, finely chopped
  • 1 onion, finely chopped
  • 1 carrot, grated
  • 1/2 cup mushrooms, diced
  • 2 small springs of rosemary, leaves chopped
  • 1 spring of oregano, leaves chopped
  • 2 sprigs of flat leaf parsley, finely chopped
  • 1/3 cup plain flour
  • 3 teaspoons powdered beef stock
  • 1/2 teaspoon pepper stock powder
  • 1 1/2 sheets of puff pastry
  • 1 egg, whisked

Instructions

Spring Lamb Shanks in Instant Pot
  1. Place lamb shanks in the instant pot. Pour in half cup of water. Sprinkle with sea salt and pepper. Add sprigs of rosemary. Place lid on and seal instant pot. Cook on high pressure for 1 hour. Allow pressure to release naturally after cooking.
  2. Remove cooked lamb shanks from the instant pot onto a roasting tray. The lamb should be cooked to fall off or easily slide off the bone. Pick the cooked lamb shank meat off of the bones. Allow to cool. Put the lamb shank bones and any fatty excess to the side.
  3. Sieve broth from the instant pot removing herb or lamb pieces etc.
Hey Presto Spring Lamb Shanks Pie
  1. Pre-heat oven to 200 degrees celsius.
  2. Warm frying pan and drizzle with olive oil. Fry off tomato paste. When cooked add diced tomatoes
  3. While frying the tomato mixtures, get busy prepping the veggies for the pie. In the food processor blitz onion and garlic, carrots. Chop mushrooms. Finely cut herbs with the mezzaluna knife.
  4. Add veggies and herbs to the tomato mixture. Cook until veggies are lightly cooked. Mix in lamb shank mixture.
  5. In a separate bowl mix together flour, beef stock, pepper. Add a ladel of lamb broth and whisk together to make a gravy like mix. Add to pan with lamb. Keep adding lamb broth to pan until you have a loose lamb shank pie mix. Pour this into pie dish. Top with puff pastry to the style of your liking. Brush on egg mixture. Cook until golden.
  6. Place on a wooden chopping board and top with a piece of fresh rosemary. Serve family style.
