I made JAMIE OLIVERS Osso Buco Melt-in-your-mouth Shin Stew.

There was nothing better than coming come this week through the pouring rain and hail to the smell of Osso Buco cooking up in our Slow Cooker.  With Jamie Oliver’s delicious Shin Stew. I could smell the rosemary as soon as I opened the door. I couldn’t help sneaking a taste before the mash spuds were ready to serve for our family!

A quick meal your kids will love with a quality protein you are happy with, sounds like just what you need after a busy day at work and mumm-ing. Doesn’t it.

I am back at the Farmers Market this weekend with our FRESH Grass Fed Beef from our Adelaide Hills family farm.

Our Osso Buco sold out quickly at our Farmers Markets last month.

So this weekend I am bringing more.

I pick up our Grass Fed Beef fresh from our butcher Friday morning to bring to you Saturday morning.

Jamie Olivers Melt-in-your-mouth Shin Stew

There was nothing better than coming come this week through the pouring rain and hail to the smell of Osso Buco cooking up in our Slow Cooker. With Jamie Oliver’s delicious Melt-in-your-mouth Shin Stew. I could smell the rosemary as soon as I opened the door. I couldn’t help sneaking a taste before the mash spuds were ready to serve for our family!

Ingredients

  • 4 x Peppermint Ridge Farm Co Osso Buco Shin pieces
  • 2 red onions, diced
  • 3 carrots, diced
  • 3 sticks of celery, trimmed and diced
  • 6 cloves of Hidden Valley Farm organic garlic (whole)
  • 3 springs garden fresh rosemary
  • 2 bay leaves
  • 1 cinnamon stick (or 1 tspn ground cinnamon)
  • Salt and pepper
  • 2 X 400g tins diced tomatoes
  • 1 cup Method Barossa Cabernet Sauvignon

Instructions

  1. Dice the carrot, onion and celery. Place in slow cooker. Add Osso Buco, tinned tomatoes, garlic, Cabernet Sauvignon and spices. Chop fresh herbs and add in the slow cooker. Mix around. Place on lid and switch on high for 4 - 6 hours.
  2. Peel and chop potatoes into a fine dice. Boil until soft. Drain. Add salt, pepper, butter and cream. Mash and mix until smooth.
  3. Serve Shin Stew on top of creamy mash topped with parsely freshly picked from the garden.

Notes

Jamie Olivers' original recipe calls for the meat to be cut off the bone. However I prefer the flavour and nutrition (minerals) that come from ccoking our Grass Fed Beef bone-in.


Jamie's original recipe includes a handful of dried porcini. I have not had the chance to get out and go foraging in the Adelaide Hills for porcini. They are highly prized, but there if you know where to look for them at this time of year. And I also didn't have any fresh mushrooms in our fridge. So I cooked this Stew without them. It was still delicious!
