You know how sometimes you just get ON A ROLL with a style of recipe that just hits right with your family. And so I think when you find it. It’s just best to stick with it.
For us. That has been MEATBALLS.
Lately I have been loving making meatballs with Grass Fed Beef Mince from our farm.
As well as pulling out some Grass Fed Spring Lamb Mince from last year from the bottom on the freezer. It was a lovely surprise to find that I still had some Spring Lamb Mince left. As I thought it was all gone and I would have to wait until Spring 2026 for more.
Today I am going to share with you my MEATBALL EDIT. Three meatball recipes that have been much loved by our family. Each recipe a favourite by a different member of our family.
MEATBALLS EDIT 1: Speedy Meatballs

Speedy Meatballs
Speedy Meatballs is a weeknight version of a family favourite meatball recipe. You get the flavour of the basil and tomato sauce in a meal that can be whipped together and on the table in 30 minutes.
Ingredients
- 500g Peppermint Ridge Farm Co Grass Fed Beef Mince
- Olive Oil
- 2 tablespoons dried basil
- 1 tablespoon dried parsley
- 1 teaspoon dried chilli flakes
- 3 garlic cloves crushed
- Salt and Pepper
- 1 tin diced tomatoes
- 250g wholemeal pasta spirals (cooked as per the packet instructions)
- 50g grated parmesan cheese
Instructions
- Preheat oven to 180 degrees.
- Drizzle Olive Oil into the bottom of a casserole dish.
- Lay packet of Peppermint Ridge Grass Fed Beef Mince flat on a plate. Use a knife to cut into 16 squares. Roll each square into a small ball. Place on the bottom of the casserole dish.
- Sprinkle meatballs with dried basil and parsley and crushed garlic. Bake meatballs in the oven until golden.
- Top with chilli flakes and tinned tomatoes. Bake covered until cooked through.
- Put water on to boil to cook the pasta as per the packet instructions.
- Serve Meatballs on top of cooked pasta, with a generous scoop of the tomato sauce and a sprinkle of parmesan cheese.

MEATBALLS EDIT 2 : Sunday Best Berbere Spiced Mini Lamb Meatballs

Sunday Best Berbere Spiced Mini Lamb Meatballs
Berbere for Lamb was recommended to me by Adelaide Showground Farmers Market photographer John. I have to say, I am a fan! This Ethiopian Spice Mix has a complex depth of flavour that is beautiful and keeps you thinking after "what was it that made that so amazing?" I really loved these meatballs. The feta reminded me of greek patties my friend makes. I went back for seconds.
Ingredients
- 500g Peppermint Ridge Farm Co Minced Leg of Lamb
- 2 red onions
- 3 garlic cloves
- 1/2 inch piece of ginger, peeled
- 1 tbspn olive oil
- 1 1/2 tablespoon Herbies Berbere Spice Mix
- 2 teaspoons salt
- 1/8 cup red wine
- 1/8 cup red wine vinegar
- 1/2 cup toasted pine nuts
- 2/3 cup feta, crumbled
- 1 X tin 450g tomatoes
- 1/4 cup currants
- 300g pack of San Remo Pearl Cous Cous
Instructions
- Preheat oven to 180 degrees
- Chop onion, garlic and ginger in a food processor. In a pan heat olive oil. Add chopped veggies plus wine and vinegar. Cook down until onions translucent, making a caramelised onion like mixture
- Drizzle a casserole dish with olive oil.
- In a bowl, add diced lamb, feta, salt and pepper. Plus half the onion mixture. Mix together. Make meatballs. Place meatballs in casserole dish. Bake in oven until browned.
- Mix together tinned tomatoes, other half of onion mixture, currants and seasoning in a bowl. Sprinkle mixture across top of meatballs. Bake until golden.
- Cook Pearl Cous Cous in saucepan, as per packet instructions. Serve Meatballs on top of the cooked Pearl Cous Cous.

Meatball Edit 3 : Yummy Balls

Yummy Balls
Yummy Balls is a childhood family favourite for me. The rice that cooks inside as the meatball is baked makes this really yummy. And much enjoyed by our family as we were growing up. And now enjoyed by many grandchildren too. I have never actually cooked Yummy Balls before, as I usually enjoy them cooked by Mum. But I think that these will now become a part of our regular meat rotation.
Ingredients
- 500g Peppermint Ridge Farm Co Grass Fed Beef Mince
- 1/2 cup uncooked rice
- 100g bacon
- 1/2 cup bread crumbs
- 1 onion
- salt and pepper
- 1 egg
- 1 jar of passata
- 1 1/2 cups water
- Grated cheese
Instructions
- Pre-heat oven to 180 degrees.
- Blitz onion in food processor. Tip into a bowl.
- Drizzle oil in lidded dutch oven or casserole dish.
- Blitz the bread (with fresh herbs) to make bread crumbs. Add to bowl. As well as adding bacon, beef mince, salt, pepper, egg and rice. Mix together and form meatballs. Place meatballs in dish and cover with the lid. Bake for 15 minutes, until just golden.
- Remove dish from the oven. Add tomato passata onto of meatballs. Put 1 1/2 cups of water into passata jar and swish it around to help empty the jar. Pour water over meatballs. Bake for 1 hour and 15 minutes.
- Remove dish from the oven. Sprinkle with cheese. Bake for 30 minutes, or until cheese is golden. Enjoy
Notes
Mum's recipe called for tomato soup. I used tomato passata, as I already had it in the cupboard.
I also added a handful of fresh herbs when I blitzed the bread crumbs in the food processor. As we have an abundance of fresh herbs at the moment. I included parsley, rosemary, thyme and oregano. I love the flavour. And mid winter with all the lurgy about, I think it is always great to add in extra nutrition of the greens, including all the vitamin c in fresh parsley.
