Cornish Pastie Spring Lamb Sausage Rolls

I have a childhood memory of my paternal Grandmother’s homemade Cornish Pasties. From her families Cornish heritage.

I still regret not asking for her recipe when I had the chance.

With it being winter root veg season, I have been having a hankering for Cornish Pasties. However on the time schedule of a evening dinner, routine I chose to make Cornish Pasty Lamb Sausage Rolls.

I turned to local South Australian recipe book and social history expert Liz Harfull. For the Mary’s Farm Pasties recipe from local Mary Starkey from the Mount Pleasant Show for guidance on the ingredients from the original Blue Ribbon Cook Book. Marky Stakey’s Farm Pasties are Show Prize winning, even including the Adelaide Royal Show.

I really enjoy Liz Harfull’s Blue Ribbon cook book (2008). As I grew up with my Nana being involved in the convening of show cooking, And I have memories of going in the large stone building under the local oval grand stand for the preparations of exhibits. I submitted some cooking exhibits for our local show. And now our Junior Farmers are choosing to join in with this fun also.

Cornish Pastie Lamb Sausage Rolls

Biting into the crunchy puff pastry, I wondered "what is it that is making this taste like a real pastie?" I think it's the swede and potato that make it just so delicious. Just like the flavour of Cornish Pasties from my childhood from my Paternal Grandmother. We enjoyed a family meal of Cornish Pastie Lamb Sausage Rolls. With extra for a few days school lunches for our kids.

Ingredients

  • 500g Peppermint Ridge Farm Co Spring Lamb Mince
  • 4 potatoes, peeled and grated (chunky)
  • 1 large onion, chopped
  • 2 large carrots, grated (chunky)
  • 1 swede, grated (chunky)
  • 1 turnip, grated (chunky)
  • Sea salt flakes and pepper
  • 6 puff pastry sheets (butter puff)
  • 1 egg, beaten

Instructions

  1. Preheat oven to 200 degrees. Line baking trays with brown baking paper.
  2. Grate potato, carrot, swede and turnip with the chunky grater. Chop onion in the food processor. Place all veggies in large bowl. Add minced spring lamb, salt and pepper. Mix thoroughly with cleanly washed hands.
  3. Lay out 6 pastry sheets on bench top. Use a sharp knife to slice down the middle of the pastry sheet. In the middle of each pastry rectangle, use a spoon to put approximately 3 cm width heaped line of minced spring lamb an veg mixture down the middle.
  4. Roll over the pastry. Cut each rectangle into 6 sausage roll pieces (Cut in half. Then cut each half in thirds). Lay out sausage roll pieces across the lined tray.
  5. Beat egg in a small dish. Use pastry brush to top each sausage roll with a thin layer of beaten egg.
  6. Cook each tray until pastry is golden and mixture inside the Cornish Pastie Sausage Roll cooked through. 12- 18 minutes. Serve with homemade tomato sauce.

My Dad tells a story from his youth. Of 4 or 5 big lads squeezing into a mini minor to head to saturday footy. After they had been required to eat a fill of Cornish Pasties before squeezing in the mini and then feeling still stuffed with pasties before hitting the footy field!

I have a childhood memory of taking a ride in our station wagon with Dad early on Saturday mornings. Picking up trays and trays of piping hot pasties to take to our local footy and netball club canteen, where Dad volunteered. Food memories are strong aren’t they. I remember the little country town bakery (long closed), the silver ford station wagon, the woollen check Onkaparinga blanket the trays sat on, and the smell of the hot pasties filling the car. Needless to say, we were hungry by the time we arrived. A pastie at the sports games on a saturday morning was our “take away” food treat for the week across winter. Daily treats, takeaway nights, drive through and lunch orders weren’t a part of our lives. We ate most of our meals homecooked from our home kitchen.
