Spring Lamb and Feta Mini Patties
These sweet little Spring Lamb and Feta Mini Patties is shared by a dear friend. As a favourite of her kids. The Greek inspired flavours remind me of a time of my life when we both worked in sea side South Australia. I remember the crashing of the waves on the cliffs during walks. And our shared classes that helped us find physical as well as mental strength, to move through the challenges we faced in our work lives.

Go to Greece without maxing out your VISA with these delicious lamb patties. Miss Farmer asked if there was any leftover to pack in her lunch box the next morning. And sadly for her, they were all gone. No leftovers on this one. Always a good sign of a family favourite recipe.

Lamb and Feta Mini Patties
Lamb and Feta Mini Patties are adapted from a recipe shared by a friend as a family favourite. Our kids loved them too. They were delicious topped with a zesty greek yoghurt sauce.
Ingredients
- 500g Peppermint Ridge Farm Co Spring Lamb Mince (Leg Mince)
- 1 small carrot, finely grated
- 1 onion, chopped finely
- 3 garlic cloves, chopped
- 1/4 cup flat leaf parsley, finely chopped
- 1/2 cup Enrico Sourdough, blitzed into crumbs
- 100g feta, crumbled
- 1 egg, beaten
- Salt and pepper
- Olive oil
Instructions
- In the food processor place Sourdough and fresh parsley in to blitz fine bread crumbs. Place in a separate bowl.
- In the food processor, place onion and garlic. Chop finely. Place into bowl. Add all other ingredients into bowl. Mix well until all combined through. Make small patties around the size of a 50 cent coin. Place on a plate.
- Preheat oven to 160 degrees. Preheat cast iron pan to medium heat and drizzle with olive oil.
- Cook 5 lamb and fetta patties until golden on both sides. Place in casserole dish in the oven to cook through and keep warm, until all batches of patties are browned. Leave in oven for 15 minutes to cook all the way through. Serve with greek yoghut dressing.
Notes
Greek Yoghurt Dressing
1/2 cup greek yoghurt
3 tablespoons of red wine vinegar
1 tablespoon of dried mint (use fresh is available)
Salt and Pepper
Mix together.
Serve dressing on top of mini patties alongside a green salad and sprinkled with finely chopped flat leaf parsley.
