Lovely Local Lemons : Recipes for immunity and hungry kids.
Yesterday at the Adelaide Hills Farmers Market I was looking forwards to stocking up on lemons from Ruth’s Yerelina Farms stall. Plus bluegum honey from As Sweet as Honey. As I had a few recipes in mind to prepare for our family. I also purchased some lovely Lowan Park Produce Pastured Chicken Drumettes, which were delicious in a lemon and homegrown thyme marinade.
As often is the case at the end of winter, the lurgy spreads thick and fast. Our family has had our share of bugs and virus’. These first two recipes have been on repeat to sooth sore throats and and nourish tummy’s which are sore, but also lacking appetite.
Lemonade Tummy Gummy's

The lovely Lemonade Tummy Gummy's have been on repeat for our family over recent months. They are filled with tummy soothing goodness. As well as just being straight up delicious! They are added to our kids lunch boxes. As well as an after school snack. One batch usually lasts our family around a week. I love knowing that when our kids are not well, I am able to give them something nourishing, no numbers and get something into their tummy's when their appetite has left the building.
Ingredients
- 1 tablespoon chamomile tea
- 1 tablespoon slippery elm
- 1 tablespoon marshmellow root
- 1 tablespoon dandelion root
- 2 cups cold water
- 1 cup lemon juice
- 1/2 cup sugar or maple syrup
- 1 cup water
- 4 tablespoons grass fed gelatin
Instructions
- Place all the tea ingredients in a glass jug. Add two cups of water. Cover and leave to stand overnight. Or a minimum of 12 hours.
- Strain through a fine sieve. Push through with a spoon so the "slimy" type substance goes through the sieve as much as possible.
- In a small saucepan heat water and sugar (or maple syrup) until sugar is absorbed in the water. Take saucepan off the heat and add the lemon juice.
- In a 1 litre glass dish (with lid) pour in tea mixture, plus the lemon water mixture. Stir together until combined.
- Sprinkle the gelatin across the top of the mixture in fine layers. It will take around 10 minutes to hydrate the gelatin. Mix all together well.
- Refrigerate 2 - 4 hours. Cut into cubes. Enjoy!

This recipe has been adapted from Kelci Cundiff on Instagram. If you are making these lovely Lemonade Gut Gummy's for adults, add 1 tablespoon of Licorice Root to the tea.
I have also been adding a Gut Health supplement featuring turmeric. Tumeric is renown for its gut health benefits. All the ingredients for the tea and the grass fed gelatin are available from your local health food store.

Perfect Hot Honey and Lemon
It has been "Hot Honey and Lemon" season at our place. A nourishing drink that has soothed sore throats and helped to boost the immunity and spirits of our family when under the weather. Master Farmer told me that I had made the "perfect" Hot Honey and Lemon recently. So I thought I would share it with you also.
Ingredients
- 1 lemon
- 2 teaspoons of honey
- warm water
Instructions
- Place a teaspoon of honey in a cup. Leave the spoon in the cup.
- Run the tap until hot steaming water runs out. 3/4 fill the up with hot water from the tap (not kettle boiled water). Mix the spoon until the honey has disolved.
- Juice half a lemon straight into the top of the cup. Enjoy!
I bought these Lowan Park Produce drummettes with the intention of having left overs to go in our kids school lunches this week. As a welcome change from sandwiches, which are not their favourite. But they were so yummy and well received that they were all eating and there were no left overs for this weeks schools lunches. So I will need to work on Plan B for stocking the fridge. And next time I will definitely be buying more drummettes from Lowan Park!

Zesty Chicken Drummettes
Ingredients
- 2 packets Lowan Park Produce Pasture Chicken Drummettes
- Zest of 2 Yerelina lemons
- Small bunch of thyme, destemeed and finely chopped
- 3 springs parsley, finely chopped
- 1 sprig rosemary, finely chopped
- 2 tablespoons olive oil
- Salt and Pepper
Instructions
- Place all ingredients in a bowl. Marinate in fridge, if time permits.
- Preheat oven to 180 degrees.
- Line casserole dish with baking paper. Place chicken drummettes on baking paper, with spacing in between.
- Cook in the oven for 20 minutes. Turn over and cook until golden.
I hope you enjoy these recipes. I have been continuing to learn more and more about gut health. Especially how the diversity of whole foods in what we eat, is an important part of nourishing our gut health. These recipes contain a wide range of whole food ingredients, which are beneficial to our gut and overall wellbeing in many ways.
